Sweet Plantain, Apple, and Chicken Sausage Hash
5-Ingredient hash in under 10 minutes highlighting the sweetness of plantains. Complimented with crisp apples and spicy sausages and topped off with an egg.
light brown sugar
can be omitted if you prefer
Cut sausage into bite-size pieces. Heat 1/2 tbsp. of olive and brown sausages for about 3 minutes.
While sausages are cooking, cut plantains and apples into bite-size pieces. Add plantains and cook for about 4 minutes until they’ve caramelized.
Add the apples and light brown sugar and cook for 2-3 minutes or until the apples have reached desired tenderness. Cook less for crisper apples, or cook longer for a softer texture.
While apples are cooking, prepare your sunny-side up eggs. Once the hash is done, top it off with eggs, serve and enjoy!
